I love fall. The cooler temperatures and the return of sweatshirts and blankets. Football season. Pumpkin ale. Fall sunlight. Leaves crunching under my feet. Butternut squash.
I'm currently obsessed with butternut squash. It wasn't really something I ever cooked with before, but I randomly bought one last week and decided to make butternut squash soup. Then I bought another one this week and made butternut squash orzo. I love it. Even better is that it is good for you--rich in fiber, vitamin C and A.
I made up my own recipe for butternut squash soup which you can find below. The best part about butternut squash soup is how easy it is to make. So simple and so delicious.

Butternut Squash Soup
4 tablespoons butter
1 onion, diced
3 carrots, chopped
4 stalks of celery, chopped
1 butternut squash, peeled and diced
4 cups chicken broth
Heat the butter in a large stock pot, then add onion, carrots and celery and cook until the veggies start to soften and the onion becomes translucent. Peel and chop the butternut squash (Not sure how? Check out the how-to on Simply Recipes) Add the squash to the pot. Add broth, salt and pepper. Let the soup simmer for about 30 minutes or until the squash is tender.
Either transfer the soup to a blender or use an immersion blender (which is much easier!!) to puree the soup.
